Fresh Mint Chutney

Ingredients
  Mint leaves 1 Cup (16 tbs), washed and stemmed
  Rice vinegar 1⁄4 Cup (4 tbs)
  Onion 1 Medium, chopped
  Jalapeno pepper To Taste, seeded, stemmed and chopped
  Salt To Taste
Directions

1. In food processor, combine mint leaves, vinegar, onion, pepper and salt., Process with on/off motion 1 to 2 minutes, until finely chopped and mixed. Season with salt to taste.
2. Transfer to covered container. Chill well for about 30 minutes before using. Store in refrigerator.
