Fresh Mint Chutney
|Mint leaves||1 Cup (16 tbs), washed and stemmed|
|Rice vinegar||1⁄4 Cup (4 tbs)|
|Onion||1 Medium, chopped|
|Jalapeno pepper||To Taste, seeded, stemmed and chopped|
1. In food processor, combine mint leaves, vinegar, onion, pepper and salt., Process with on/off motion 1 to 2 minutes, until finely chopped and mixed. Season with salt to taste.
2. Transfer to covered container. Chill well for about 30 minutes before using. Store in refrigerator.
