Mild Peach Chutney

  Unpeeled apple 1 Large, cored and chopped
  Chopped celery 1 Cup (16 tbs)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Finely chopped onion 1 Tablespoon
  Canned sliced cling peaches with juice 32 Ounce (Two 16 Ounce Cans)
  Seedless raisins 1⁄2 Cup (8 tbs)
  Cider vinegar 3⁄4 Cup (12 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Ginger 1⁄4 Teaspoon
  Cayenne pepper 1 Dash

Combine all ingredients in a 3-quart glass casserole.
Stir well.
Microwave 5 minutes on high, or until mixture boils.
Reduce setting.
Microwave 45 minutes on medium, or untl syrup is thickened and chutney is to the desired consistency, stirring after every 15 minutes.
Ladle into hot sterilized 1 -pint jars.
Cover tightly.
Store in refrigerator.
