Quick Okra Chowder
|Bacon slices||12 , chopped|
|Onion||1 Medium, minced|
|Green pepper||1 Medium, cut into strips|
|Sliced okra||1 Quart|
|Canned whole tomatoes||16 Ounce, undrained and cut into eighths|
|Canned lima beans||1 Cup (16 tbs), undrained|
|Canned corn||1 Cup (16 tbs), undrained|
|Parsley flakes||1⁄4 Teaspoon|
|Water||2 Cup (32 tbs)|
1)In a large Dutch oven, fry bacon. Make sure that they do not turn crisp but remain tender.
2)Toss in the chopped green pepper and minced onion and cook until tender.
3)Now, add sliced okra, tomatoes, lima beans, corn, parsley flakes and water.
4)Cover and simmer over low heat for 30 minutes.
5) Serve with sesame rolls or homemade bread.
