Clam Chowder Manhattan
|Onion||1 , sliced|
|Garlic bud||1 , minced|
|Chopped celery||1⁄4 Cup (4 tbs)|
|Salt pork||1⁄4 Pound, chopped|
|Chopped potatoes||1 Cup (16 tbs) (Raw Ones)|
|Boiling water||3 Cup (48 tbs)|
|Canned tomatoes||2 Cup (32 tbs) (Sieved)|
|Chopped clams||2 Cup (32 tbs) (Fresh / Canned)|
|Chowder crackers||1 Cup (16 tbs)|
1. Saute onion, garlic and celery with the salt pork 5 minutes, stirring constantly.
2. Add the potatoes, water and tomatoes. Cover and simmer 15 minutes or until the potatoes are tender.
3. Add the chopped clams, salt, pepper and thyme. Simmer 2 or 3 minutes more.
