Fish Chowder

Ingredients
  Fat salt pork 1⁄4 Pound
  Onions 2 , sliced
  Uncooked potatoes 3 Cup (48 tbs), cut into 1/2-inch cubes
  Boiling water 4 Cup (64 tbs)
  Cod/Haddock 3 Pound (Fresh / Salt Cod)
  Evaporated milk 1 3⁄4 Cup (28 tbs)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Minced parsley 1 Tablespoon
  Butter 1 Tablespoon
  Flour 1 Tablespoon
  Pilot crackers 1 Cup (16 tbs)
Directions

Cut fat salt pork into small pieces and fry slowly in soup kettle.
Add onions and cook 5 minutes.
Add potatoes, boiling water and fish cut into small pieces.
Simmer until potatoes are soft.
Add milk, salt, pepper and parsley.
Melt butter, add flour and blend thoroughly.
Add gradually to chowder, stirring until slightly thickened.
Cook 5 minutes longer.
Pour over pilot crackers.
Serves 8.
