Classic Fish Chowder

Ingredients
  Boneless haddock 2 1⁄2 Pound
  Water 2 Cup (32 tbs)
  Potatoes 6 Medium, cubed
  Cubed salt pork 1 Pound
  Onions 3 Medium, chopped
  Rich milk 2 1⁄2 Quart
  Butter 2 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

Cook fish in 2 cups water for about 15 minutes.
Cook potato in small amount of boiling salted water for about 15 minutes.
Meanwhile, dice salt pork and fry until crisp but not brown.
Add onion and cook for about 10 minutes more; do not brown.
Add potato, pork, pork fat, onions, and milk to fish.
Season to taste.
Heat slowly almost to the simmering point.
Do not boil.
Put a little butter in each soup bowl, and serve with pilot or other crackers.
