New York Clam Chowder
|Butter/Regular margarine||2 Tablespoon|
|Chopped onion||3⁄4 Cup (12 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped pared carrots||3⁄4 Cup (12 tbs)|
|Potato||1 Medium, pared and finely diced|
|Canned tomatoes||16 Ounce, cut up (1 Can)|
|Water||3⁄4 Cup (12 tbs)|
|Dried thyme leaves||1⁄8 Teaspoon|
|Canned minced clams||6 1⁄2 Ounce (1 Can)|
Place butter, onion, celery, carrots and potato in 2-qt. glass casserole.
Cover and microwave at high setting 7 minutes, or until tender, stirring after 4 minutes.
Add tomatoes, water, salt, pepper and thyme.
Cover and microwave at high setting 12 minutes, stirring after 6 minutes.
Add undrained clams.
Cover and microwave at high setting 1 minute more, or until hot.
