Fishermen's Chowder

Ingredients
  Boneless cod fillets 1 Pound (fresh or frozen)
  Salt pork 1⁄4 Pound, diced
  Finely chopped onion 1⁄2 Cup (8 tbs)
  Chopped celery 1⁄2 Cup (8 tbs)
  Diced peeled potatoes 2 Cup (32 tbs)
  Water 2 Cup (32 tbs)
  Salt 1 Teaspoon (adjust quantity as per taste)
  Pepper 1 Pinch
  Milk 2 Cup (32 tbs)
Directions

Cut each cod fillet into 3 or 4 pieces. In large saucepan, cook pork over medium-high heat until crisp and browned. Reduce heat to medium and add onion and celery; cook until softened.
Add potatoes, water, salt and pepper; cover and cook for 10 minutes. Add fish and simmer gently until fish flakes easily when tested with fork, about 10 minutes. Add milk and heat through without boiling. Season with more salt and pepper to taste if desired.
