Cheese Chowder

Ingredients
2 large potatoes, diced
1 large carrot, sliced
2 stalks celery, sliced
1 small onion, minced
1/2 teaspoon salt
1/2 teaspoon white pepper
4 tablespoons butter
4 tablespoons flour
2 cups milk
2 cups shredded Cheddar cheese
2 cans (17 ounces each) creamed
Directions

Combine vegetables and seasonings in a heavy saucepan; add 2 cups boiling water.
Bring mixture to a boil; reduce heat and simmer, partially covered, for 10 minutes.
Melt butter in a separate saucepan; whisk in flour over medium heat until absorbed.
