|Onion||3 Tablespoon, chopped|
|Water||2 Cup (32 tbs)|
|Potatoes||5 Medium, diced (peeled)|
|Carrots||1 Cup (16 tbs), finely diced|
|Milk||4 Cup (64 tbs) (scalded)|
1. Heat the oil in a heavy saucepan, add the onion, and saute until tender. Add the water, salt, potatoes, and carrots. Bring to a boil, cover, and simmer until the vegetables are tender, about 15 minutes.
2. Add the milk and bring the mixture to just below the simmer point Do not boil.
