Microwaved Clam Chowder
|Bacon drippings||1 Tablespoon|
|Onion||2 Tablespoon, diced|
|Potato||1 Small, peeled and cubed|
|Water||1⁄2 Cup (8 tbs)|
|Seasoned salt||1⁄2 Teaspoon|
|All purpose flour||1 Tablespoon|
|Milk||1 Cup (16 tbs), divided|
|Canned minced clams||6 1⁄2 Ounce, undrained (1 Can)|
In 2 quart casserole, combine bacon drippings and onion.
Microwave at high (10) 2 to 3 minutes until onion is tender.
Add potatoes, water, seasoned salt and pepper.
Microwave at high (10) 5 to 6 minutes, until potatoes are tender; stir after 2 minutes.
Add flour to 1/2 cup milk; stir well to blend.
Add flour mixture, remaining 3/4 cup milk, clams and butter to potatoes and onions.
Microwave at high (10) 6 to 8 minutes, stirring every 2 minutes.
