New England Style Fish Chowder
|Fish fillet||1 Pound (Use Haddock Or Cod)|
|Potatoes||4 , peeled and cubed small|
|Onion||1 Medium, chopped|
|Milk||2 Cup (32 tbs) (Really Calls For Top Milk But Sometimes A Little Canned Milk Can Be Used To Make Richer)|
|Margarine||1⁄4 Pound (Use Fleischmann's)|
|Cubed salt pork||1⁄4 Cup (4 tbs) (Fried With Chopped Onion Or If Salt Pork Is Not Used Fry Onion In Fleischmann's Margarine)|
Place cubed potatoes in a heavy saucepan along with onion and cover mixture barely with water.
Let boil until potatoes are partly cooked.
Cut fish into pieces and put on top of potatoes.
If water in pan is not sufficient, add enough to barely cover fish.
Cook on medium heat until fish flakes with fork.
Add milk and seasoning to taste just before serving.
Top with fried salt pork bits.
