White Chocolate

White Chocolate is prepared from cocoa butter, milk, sugar and flavoring ingredients like vanilla. In the United States since 2004 regulations regarding the manufacture of White Chocolate have been laid down. It should be made up of at least 20% cocoa butter, at least 3.5% milk fat, at least 14% total milk solids and less than 55% sugar or sweeteners. The European Union has also adopted the same standards as that of the United States with the only difference being that there is no limit on the percentage of sugar or sweeteners. White Chocolate has trace amounts of theobromine and caffeine, since it does not contain cocoa solids. Variations in White Chocolate Recipes include White Chocolate Cranberry Oatmeal and White Chocolate Raspberry Cheesecake.
