Chocolate Crackle

Chocolate crackle is a confection very popular amongst the children in Australia and New Zealand. It is also called Chocolate Bubble Cake, and is often included in the Children's birthday party menus. The product closely resembles Rice Krispies Treats sold in the United States.

Ingredients: Primary ingredients used for chocolate crackle recipe include rice bubbles and desiccated coconut. Rice bubbles are a breakfast cereal marketed by Kellogg's, which is made of crisped rice (prepared with a rice and sugar mixture that is cooked, then, dried and finally toasted). The rice bubbles impart the texture to the dish while the coconut gives it a delicious flavor. Hydrogenated coconut oil binds the ingredients as it remains in solid state at room temperature. Other ingredients used for making chocolate crackle are cocoa and confectioner's sugar. Since, it is so easy to make, children are often allowed to try their cooking skills in preparing this dessert.
 
Method of Preparation: The ingredients namely sugar, cocoa powder, crispy rice (or 'rice bubbles' as they are called in Australia) and dried, shredded coconut are mixed together in a large bowl, and melted hydrogenated coconut oil is mixed into this. Small parts of the mix are scooped into muffin cups and allowed to chill in the refrigerator so that it sets. Alternatively, the mixture can be allowed to set in a rectangular tin, and cut into small pieces after it has set. The chocolate crackles thus prepared are ready to serve.

Chocolate crackle is most often served as a confection in children's birthday parties and school fêtes. A variant called White Christmas forms a part of Christmas celebrations.
 
Chocolate Crackle Recipe Variations
Chocolate crackle can be made in a variety of different ways. Some recipes suggest use of chocolate chips instead of cocoa. Others include raisins as an additional ingredient to be mixed in with the rest of the ingredients during preparation. 
White Christmas is a similar Australian dessert that is made with a mixture of rice bubbles, desiccated coconut, milk powder, icing sugar, glace cherries, raisins and hydrogenated coconut oil. Melted white chocolate is sometimes used in place of the coconut oil as a binding ingredient. This dessert is popular during Christmas time, especially amongst children.
