Wash the leaves under cold running water.
Carefully dry them with paper toweling.
Arrange them on a flat surface covered with waxed paper.
Place the chocolate in the top part of a double boiler.
Place over hot water until the chocolate is melted.
Remove from heat.
With a table knife spread the melted chocolate on the underside of the mint and lemon leaves.
Place on a plate.
Cover and chill until firm.
Carefully separate the chocolate from the leaves.
If you prefer, you can cut wax paper into desired shapes (rounds or squares), cover them with the melted chocolate, cool and peel.
These are wonderful to decorate puddings, mousses and cakes.
