Chocolate Angel Food
|Cake flour||3⁄4 Cup (12 tbs), sifted|
|Cocoa powder||1⁄4 Cup (4 tbs)|
|Egg whites||1 Cup (16 tbs)|
|Cream of tartar||1 Teaspoon|
|Sugar||1 1⁄4 Cup (20 tbs), sifted|
|Vanilla extract||1 Teaspoon|
|Chocolate glaze||1⁄4 Cup (4 tbs)|
Sift flour and cocoa together several times.
Beat egg whites until frothy.
Add cream of tartar and salt; beat until stiff but not dry.
Gradually beat in sugar.
Then fold in sifted dry ingredients in fourths.
Pour into ungreased 9-inch tube pan and bake in preheated moderate oven (325°F.) for about 1 hour.
Invert pan on rack.
Let stand until cold.
Top with Chocolate Glaze.
