Chocolate Yule Log
|Unbleached white flour||3⁄4 Cup (12 tbs)|
|Cocoa||1⁄4 Cup (4 tbs)|
|Baking powder||1 Teaspoon|
|Eggs||2 (Room Temperature)|
|Egg whites||2 (Room Temperature)|
|Sugar||1⁄2 Cup (8 tbs)|
|Water||1⁄3 Cup (5.33 tbs)|
|Cranberries||4 , coated with egg white and rolled in sugar|
|Greens||1 Cup (16 tbs)|
Sift flour, cocoa and baking powder three times.
Whip eggs and egg whites for 3 minutes.
Add sugar gradually and whip for 3 minutes more.
Fold in water and vanilla.
Gently fold in flour mixture.
Pour into a lightly greased 15" x 10" x 1 1/2" jelly roll pan lined with parchment or waxed paper.
Bake at 350° for 12 to 15 minutes.
Invert onto a waxed paper-lined towel.
Remove paper from bottom of cake.
Roll up cake and towel from narrow end.
Unroll and spread filling evenly over cake.
Roll up and place on a serving plate, seam side down.
Ice to look like a log.
Decorate with greens and cranberries.
