Cherry Chocolate Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Unsweetened chocolate||1 Ounce (1 Square)|
|Sifted enriched flour||1 Cup (16 tbs)|
|Slightly beaten egg white||1|
|Broken california walnuts||1 Cup (16 tbs)|
|Cherry preserves||1⁄2 Cup (8 tbs)|
Cream together shortening, sugar, salt, and egg yolk till fluffy.
Melt chocolate; blend into creamed mixture.
Stir in flour.
Chill 1/2 hour.
Shape in 1-inch balls; dip in slightly beaten egg white; roll in nuts.
Place 2 1/2 inches apart on greased cooky sheet; press centers with thumb.
Bake at 350° 8 minutes; press centers again.
Bake about 8 minutes longer.
Cool slightly; remove from pan.
At serving time, fill centers with cherry preserves.
