Chocolate Almond Surprises
|Butter stick||8 Ounce, softened (2 Sticks)|
|Granulated sugar||1 Cup (16 tbs)|
|Firmly packed dark brown sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Almond extract||1 Teaspoon|
|Flour||3 1⁄2 Cup (56 tbs)|
|Baking soda||1 Teaspoon|
|Almond paste||8 Ounce|
|Semisweet chocolate chips||1⁄2 Cup (8 tbs)|
|Powdered sugar||1⁄2 Cup (8 tbs)|
1. In a medium bowl, beat together butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla and almond extract.
2. In a small bowl, stir together flour, baking soda, and salt until well mixed. Add to butter-sugar mixture and blend well. Cover and refrigerate dough 30 minutes, or until firm.
3. Preheat oven to 350°F. Using about 1/4 teaspoon almond paste at a time, shape into 48 equal-size balls. Press 3 or 4 chocolate chips into almond paste. Wrap about 1 tablespoon chilled dough around each ball of filling, pinching to enclose completely.
4. Place about 2 inches apart on greased cookie sheets. Bake 10 minutes, or until lightly browned. Let stand 2 minutes on cookie sheets, then remove to a rack to cool. When cool, roll in powdered sugar.
