White Chocolate Chunk Brownie Cookies
|Butter||6 Tablespoon, softened|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|Unsweetened chocolate square||1 Ounce, melted (2 Pieces)|
|Egg||1 , lightly beaten|
|Instant coffee powder||1⁄2 Teaspoon, dissolved in 1 teaspoon water|
|Vanilla extract||1⁄2 Teaspoon|
|Flour||1 1⁄4 Cup (20 tbs)|
|Baking soda||1⁄2 Teaspoon|
|White chocolate chunks||1 Cup (16 tbs)|
1. Preheat oven to 375°F. In a medium bowl, beat butter, granulated sugar, and brown sugar with an electric mixer on medium speed until creamy. Stir in melted chocolate and egg until blended. Add dissolved coffee and vanilla and stir until blended. Beat in flour, baking soda, and salt. Stir in chunks.
2. Drop by teaspoonfuls 1 inch apart onto greased cookie sheets. Bake 8 to 10 minutes, or until set. Let cookies cool 2 minutes on sheets, then remove to a rack and let cool completely.
