Chocolate Peppermint Drops

  Butter 8 Ounce, softened (2 Sticks)
  Sugar 1⁄4 Cup (4 tbs)
  Egg 1
  Unsweetened chocolate square 2 Ounce, melted (2 Squares, 1 Ounce Each)
  Vanilla extract 1 Teaspoon
  Peppermint extract 1⁄2 Teaspoon
  Flour 2 1⁄2 Cup (40 tbs)
  Baking powder 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Mint chocolate chips 1⁄4 Cup (4 tbs)

1. In a medium bowl, beat butter and sugar with an electric mixer on medium speed until light and fluffy. Beat in egg, chocolate, vanilla, and peppermint extract.
2. Add flour mixed with baking powder and salt and beat until blended. Cover and refrigerate at least 1 hour, until firm.
3. Preheat oven to 375°F. Shape dough into 1-inch balls and place 1 inch apart on ungreased cookie sheets. Place one mint chocolate cnip in the center of each ball and press gently to flatten.
4. Bake 8 to 10 minutes, or until edges just begin to brown. Let stand 2 minutes, then remove to a rack and let cool completely.
