Nob Hill Grand Cornish Game Hens
|Cornish game hens||4 , thawed|
|Onion||1 Medium, quartered|
|Grand marnier liqueur||1⁄3 Cup (5.33 tbs)|
|Ground chocolate||1 Tablespoon|
Season hens, inside and out, with salt and pepper.
Place 1 onion quarter into each cavity.
To prepare sauce, combine Grand Marnier with Ground Chocolate, butter and salt.
Pour 1 teaspoon sauce in each cavity.
Brush sauce over skin of hens.
Place hens, breast side down, on baking pan with rack.
Bake at 350° F for 30 minutes.
Turn breast side up and brush with sauce.
Bake additional 30 minutes, brushing twice with remaining sauce.
Place hens on serving plate.
Drain drippings from pan; pour over hens.
Stuff a small bunch parsley into cavity of each hen.
Flame with additional Grand Marnier, if desired.
Serve with wild rice and spiced peaches.
