Chocolate Chip Date Cake
|Water||1 1⁄2 Cup (24 tbs)|
|Baking soda||4 3⁄4 Teaspoon, divided|
|Dates||1 Cup (16 tbs), chopped|
|Butter||3⁄4 Cup (12 tbs)|
|Sugar||1 1⁄3 Cup (21.33 tbs), divided|
|Baking powder||1⁄4 Teaspoon|
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Semi-sweet chocolate chips||6 Ounce|
Preheat oven to 350°.
Grease an 8-inch square pan.
In a small pot, bring the water to a boil.
Add 4 1/2 teaspoons baking soda and dates.
Set aside to cool slightly.
Meanwhile, in a large bowl, cream together butter, 1 cup sugar, 1/4 teaspoon baking soda, baking powder and salt.
Add eggs, one at a time, beating well with each addition.
Alternately add flour and water-date mixture.
Pour into prepared pan.
Sprinkle chocolate chips over top.
Sprinkle 1/4 cup sugar over top of chocolate chips.
Do not stir.
Bake at 350° for 40-45 minutes or until sides of cake pull away from the sides of the pan.
Do not test with toothpick as it will be coated with chocolate and the cake may not appear to be done.
To serve, leave in the pan and cut into squares.
Or, cool cake completely, cut into small squares and place each square in a paper muffin cup.
Arrange muffin cups on a pretty platter.
