Chocolate Chip Date Cake
|Chopped dates||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Boiling water||1⁄2 Cup (8 tbs)|
|All purpose flour/Unbleached flour||1 Cup (16 tbs) (Pillsbury)|
|Sugar||1⁄2 Cup (8 tbs)|
|Unsweetened cocoa||1 Tablespoon|
|Baking soda||1⁄4 Teaspoon|
|Margarine/Butter||1⁄2 Cup (8 tbs), softened|
|Semi sweet chocolate chips||1⁄2 Cup (8 tbs)|
|Chopped nuts||1⁄4 Cup (4 tbs)|
Heat oven to 350Â°F.
Grease and flour bottom only of 8-inch square pan.
In large bowl, combine dates, 1/2 teaspoon baking soda and water; cool 5 minutes.
Add remaining cake ingredients except chocolate chips; blend at low speed until well combined.
Beat 2 minutes at medium speed.
Stir in 1/2 cup chocolate chips.
Pour batter into greased and floured pan.
Sprinkle topping ingredients evenly over batter.
Bake at 350Â°F for 25 to 35 minutes or until toothpick inserted in center comes out clean.
