Creme Filled Chocolate Cookies
|Butter/Margarine||3⁄4 Cup (12 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Baking powder||1 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
|Vanilla creme icing||1⁄4 Cup (4 tbs) (adjust quantity as needed)|
Microwave butter in a 2 1/2-quart glass mixing bowl at HIGH 30 seconds.
Blend in sugar and egg.
Add flour, salt, baking powder, cocoa, and vanilla.
Chill, if necessary, for easier handling.
Shape dough into twenty-four 1-inch balls.
Place 1 inch apart on waxed paper.
Flatten each ball with bottom of a glass dipped in sugar.
Microwave 2 cookies, uncovered, at HIGH 1 minute.
Microwave 12 cookies at HIGH 3 to 3 1/2 minutes.
Fill between two cookies with Vanilla Creme Icing.
