Chocolate Cream Cushions
|Butter/Margarine||6 Tablespoon, softened|
|Sugar||1 Cup (16 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Baking soda||1 1⁄4 Teaspoon|
|Unsweetened cocoa||5 Tablespoon|
|Milk||1 Cup (16 tbs)|
|Buttercream||1⁄2 Cup (8 tbs)|
In large bowl of an electric mixer, beat butter and sugar until creamy; beat in egg and vanilla.
In another bowl, stir together flour, baking soda, salt, and cocoa; add to butter mixture alternately with milk, beating just until smooth.
Drop dough by rounded teaspoonfuls onto greased baking sheets, spacing cookies about 2 inches apart.
Bake in a 400° oven for 10 minutes or until firm when lightly touched.
Transfer to racks and let cool completely.
Meanwhile, prepare your choice of buttercream.
Spread bottoms of half the cooled cookies with buttercream; top with remaining cookies, top side up.
