Rum Balls With Vanilla Wafers
|Vanilla wafers||17 1⁄2 Ounce (1 Package)|
|Walnuts/Dried peanuts / filberts / almonds||14 Ounce (1 Can)|
|Light corn syrup||1⁄2 Cup (8 tbs)|
|Dark rum/Bourbon||1⁄4 Cup (4 tbs)|
|Confectioners sugar||1⁄2 Cup (8 tbs) (Adjust Quantity As Needed)|
Grind vanilla wafers and nuts very fine in a food grinder or electric blender.
Mix with cocoa, syrup and rum until a thick paste is formed.
Dust the palms of hands with the sugar.
Pull off the dough in bits, and roll into balls the size of a big cherry.
Set aside to dry for about an hour.
Roll in sugar, and store in an air-tight container for several days to mellow.
