Chocolate Yum Yums
|Vegetable shortening||1⁄2 Cup (8 tbs)|
|Baking chocolate||2 Ounce|
|Granulated brown sugar replacement||1⁄2 Cup (8 tbs)|
|Egg||1 , well beaten|
|Flour||1 1⁄2 Cup (24 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Skim milk||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Brazil nuts||1⁄4 Cup (4 tbs), finely chopped|
|Unsweetened coconut||1⁄4 Cup (4 tbs), grated|
Melt shortening and baking chocolate; add brown sugar replacement and fructose, stir until smooth.
Add egg and water and mix thoroughly.
Sift dry ingredients together.
Add dry ingredients alternately with milk and vanilla extract.
Pour into a 15 1/2 x 10 1/2 in. (39 x 25 cm) greased jelly roll pan.
Sprinkle with chopped brazil nuts and coconut.
Bake at 350°F (175°C) for 10 to 12 minutes.
Cool slightly and cut into 1 1/2 in. (4 cm) squares.
