Chocolate Mint Chip Meringue Kisses
|Egg whites||3 (Room Temperature)|
|White distilled vinegar||1 Teaspoon|
|Sugar||1 Cup (16 tbs)|
|Green food coloring||3 Drop|
|Mint flavored chocolate chips||12 Ounce (1 Package)|
Preheat oven to 350°F.
Line 2 baking sheets with double thickness of waxed paper.
Beat egg whites and vinegar in large bowl of electric mixer until soft peaks form.
Add sugar 1 tablespoon at a time and continue beating until stiff but not dry.
Tint mixture with food coloring, if desired, until pale green.
Fold in chocolate chips.
Drop mixture by heaping teaspoons onto prepared baking sheets.
Transfer to preheated oven and immediately turn off.
Let meringues dry in oven at least 6 hours or overnight.
Carefully remove meringues from waxed paper.
Store in airtight container in cool dry place.
