Chocolate Pecan Cookies
|Shortening||1 Cup (16 tbs)|
|Brown sugar||1 Cup (16 tbs) (Well Packed)|
|Sugar||1⁄2 Cup (8 tbs)|
|Vanilla extract||1 Teaspoon|
|Orange peel||3 Tablespoon, grated|
|Whole wheat flour||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Pecans||1 Cup (16 tbs), chopped|
|Chocolate chips||1 Cup (16 tbs)|
Preheat oven to 375 °F (190 °C).
In a bowl, cream shortening, brown sugar and sugar.
Mix in eggs, vanilla extract and orange peel.
In a second bowl, sift flour, baking soda and salt.
Fold into liquid mixture.
Add pecans and chocolate chips.
Shape dough into 1 inch (2.5 cm) balls.
Place on an unbuttered cookie sheet.
Using the bottom of a glass coated with icing sugar, flatten balls into nice, even rounds.
Bake in oven 8-10 minutes.
