Green Goddess Dip For Potato Chips

Ingredients
  Garlic 1 Clove (5 gm), grated
  Anchovy paste 2 Tablespoon
  Chives 3 Tablespoon, finely chopped
  Lemon juice 1 Tablespoon
  Tarragon wine vinegar 1 Tablespoon
  Heavy cream 1⁄2 Cup (8 tbs)
  Mayonnaise 1 Cup (16 tbs)
  Parsley 1⁄4 Cup (4 tbs), finely chopped
  Coarse salt To Taste
  Coarsely ground black pepper To Taste
Directions

MAKING
1. In a non-metallic bowl, combine the first five ingredients.
2. Stir to blend well
3. Combine cream and mayonnaise, whisk with fork and add to the bowl. Stir well.
4. Add chopped parsley and season to taste.
5. Cover and refrigerate to chill and intensify the flavors before serving.

SERVING
6. Pour into a serving bowl and accompany with tortilla chips or dippers of your choice.

TIPS
Use finely chopped, canned whole anchovies if you do not have anchovy paste.
