Candied Coconut Chips
|Water||2 1⁄2 Cup (40 tbs)|
|Sliced fresh coconut||1 1⁄2 Cup (24 tbs)|
|Granulated sugar/Colored sugar||2⁄3 Cup (10.67 tbs)|
Bring water and the 1 1/2 cups sugar to boiling, stirring occasionally.
Boil, uncovered, 25 to 30 minutes or till mixture resembles corn syrup and measures 1 cup.
Remove from heat; stir in coconut slices.
Using slotted spoon lift out a few pieces at a time; quickly roll in the 2/3 cup sugar.
Let dry, lightly covered, on cheesecloth-covered rack for 1 to 2 days.
