Giant Oatmeal Peanut Butter Chip Cookies

Ingredients
  Butter/Margarine 1 Cup (16 tbs)
  White sugar 1 Cup (16 tbs)
  Brown sugar 1 Cup (16 tbs)
  Eggs 2
  Vanilla 1 Teaspoon
  Orange 1⁄2 Teaspoon
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Salt 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Cinnamon 2 Teaspoon
  Allspice 2 Teaspoon
  Cloves 2 Teaspoon
  Ginger 1 Teaspoon
  Peanut butter chips 1 Cup (16 tbs)
  Dry roasted peanuts 1⁄2 Cup (8 tbs), chopped
  Quick cooking oats 3 Cup (48 tbs)
Directions

In large bowl, cream butter- and both sugars until light and fluffy.
Beat in egg, vanilla, and orange extract.
Sift together flour, salt, soda, and spices.
Stir into butter mixture.
Stir in peanut butter chips, chopped peanuts, and oats.
Let dough sit at room temperature for two hours.
Drop about 1/4 cup dough at a time onto greased cookie sheets.
Flatten dough slightly with back of spoon.
Bake at 375 degrees for 10 minutes.
Do not over bake.
Let cool on cookie sheets 5 minutes before removing with spatula.
