  Hard cooked eggs 2
  Chopped ripe olives 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Chopped pickle relish 1 Tablespoon
  Mayonnaise 2 Tablespoon
  Potato chips 1 Cup (16 tbs) (Adjust Quantity As Needed)
  Pimiento 1 Tablespoon

Chop eggs, add olives, salt, pickle relish and just enough mayon- naise to hold ingredients together.
Place a scant tablespoon on a fresh, crisp potato chip.
Garnish with tiny strips of pimiento and serve at once.
Makes about 20.
