Parsnip Chips

Ingredients
  Olive oil 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Black pepper 1⁄4 Teaspoon, freshly ground
  Cayenne pepper 1 Pinch
  Parsnips 4 , very thinly sliced (peeled)
Directions

1. Preheat oven to 400°F (200°C).
2. In a medium bowl, combine oil, salt, pepper and cayenne. Add parsnips and toss to coat well.
3. Place chips on a baking sheet and bake in oven 5 minutes. Turn and bake another 5 minutes. Serve immediately.
