Mint Chip Ice Cream

Ingredients
  Unflavored gelatin 1 1⁄2 Teaspoon
  Boiling water 2 Teaspoon
  Green peppermint flavoring 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Low calorie whipped topping mix 2 1⁄2 Ounce (1 Envelope)
  Cold water 1⁄2 Cup (8 tbs)
  Vanilla extract 1 Teaspoon
  Mini semi-sweet chocolate chips 1⁄4 Cup (4 tbs)
Directions

Sprinkle gelatin over boiling water, stirring to dissolve.
Add peppermint flavoring and salt; stir well.
Let mixture cool.
Combine topping mix, cold water and vanilla in bowl, and whip mixture until stiff.
Fold in peppermint mixture and chocolate chips.
Pour into freezer tray and freeze until firm.
