Nanning food refers to the food eaten in Nanning, which is the capital of the Guangxi region of China, and is called 'Green City' as it is blessed with lush natural foliage. The food of Nanning is a mix of local cuisines as well as Cantonese and Southeast Asian cuisines. It has Chinese influences from Szechuan, Guangdong, Jiangsu and Hunan cuisines, as well as foreign influences from Thai, Japanese and Western cuisines. The flavors are of fresh ingredients and lots of spices.

 

Common Ingredients of Nanning Food

Rice is a principal ingredient used for preparing various types of noodles, besides being cooked by steaming. Spring onions, soy sauce, corn starch, vinegar, rice wine, sesame oil and scallion oil are used for flavor in various dishes.  Spices commonly used include ginger, garlic and chili peppers. Tofu, black beans, fresh vegetables, eggs and fish dishes are also common.

 

Popular Dishes from Nanning Cuisine

  • Laoyou noodles: This spicy noodle dish consists of noodles along with bamboo shoots and lobster sauce. The dish is about a century old, and legend goes that is was prepared by the owner of Zhou's Teahouse for a customer who was down with cold, and benefited from the dish.
  • Manual rice noodles:They are a kind of noodles made of rice flour, which are prepared just before being cooked. To prepare them, rice flour is mixed with water to form a paste, which is allowed to pass through a sieve like apparatus to give it the form of noodles. The noodles are directly added to boiling water or soup and cooked. They are served with meat, vegetables and condiments.
