Chinese Sausage

Chinese sausages are sausages made in China from a variety of meat. They are known as Lap Cheong locally. Pork meat is commonly used to make sausages whereas livers of pork, duck or turkey are also used. Chinese sausages made of liver are bright red in color compared to meat sausages. The sausages are either smoked or steamed; they come in a variety of shapes and sizes. Run Chang is a type of Chinese sausage made from duck liver.
