Chinese Cucumber Salad

Chinese cucumber salad is a light refreshing salad eaten as a side dish for Chinese meals. Cucumber are cut into slices and marinated in a dressing made of soy sauce, vinegar, rice wine and seasonings. Some versions of the salad use a cooked sauce like dressing which is usually hot to taste. The salad is made in no time and requires a few hours of marination before serving. Along with cucumber vegetables like cabbage and mushrooms are also added to create variety.
