Chinese Style Chicken In Lettuce Cups
|Ground chicken||3⁄4 Pound|
|Chopped basil/1 tablespoon dried||1⁄4 Cup (4 tbs)|
|Soy sauce||2 Tablespoon|
|Lime juice||2 Tablespoon|
|Garlic||2 Clove (10 gm), chopped|
|Jalapeno||1 Large, chopped|
|Garlic chili sauce/Hot pepper sauce||1 Teaspoon|
|Oriental sesame oil/Vegetable oil||1 Tablespoon|
|Boston lettuce leaves||4|
|Chopped green onions||1 Cup (16 tbs)|
|Roasted peanuts||1 Tablespoon|
Combine first 8 ingredients in medium bowl and stir to blend well. (Can be prepared 1 day ahead. Cover and refrigerate.)
Heat sesame oil in heavy medium skillet over high heat.
Add chicken mixture and saute until chicken is just cooked through, breaking up clumps with back of spoon, about 4 minutes.
Transfer chicken mixture to platter.
Arrange lettuce around edges; serve, passing onions and peanuts, if desired.
