Szechwan Shrimp

Ingredients
  Medium shrimp 1 Pound
  Soy sauce 6 Tablespoon
  Dry sherry 1⁄4 Cup (4 tbs)
  Sesame oil 1⁄2 Teaspoon
  Scallions 2 , chopped
  Ginger root pieces 2 , crushed
  Salt 1⁄2 Teaspoon
  Sugar 1 Teaspoon
  Dried hot red pepper 1 , seeded and crushed
  Peanut oil 1 Tablespoon
Directions

Clean the shrimp without removing the shells: Pull off the legs and slit the shell down the back; carefully lift out the black vein without loosening the shell.
Rinse the shrimp quickly.
Combine the remaining ingredients except peanut oil.
Add the shrimp and stir.
Refrigerate for 2 to 3 hours, stirring occasionally.
Remove shrimp from marinade and dry thoroughly.
Reserve marinade.
Serve immediately.
