|Pork kidneys||1 Pound|
|Water||2 Cup (32 tbs)|
|Sesame seed oil||1 Teaspoon|
|Soy sauce||1 Teaspoon|
|Lemon juice||1 Teaspoon|
Wash the kidney well, remove the membranes, white veins and core and soak in water for one hour, changing the water once or twice.
Place in a pan with 2 cups water, bring to a boil and boil for 5 minutes.
Remove from the water and drain.
Heat a pan with 1 tablespoon oil and when hot, saute the onion till it browns.
Remove and drain well.
Pass the kidney through a mincer and then mix with the onion.
Mix the sesame seed oil, soy sauce and lemon juice, and add to the kidney.
Spread on toast rounds.
