Chinese Chews

The chinese chews are prepared with nuts, fruits and spiced with ginger. Prepared with a batter of fruit sugar, flour, butter and the fruit and nut goodies like walnuts, cherries, pineapple and dates, the baked chews may be rolled in fruit sugar too.
Ingredients
  Eggs 2
  Fruit sugar 1 Cup (16 tbs)
  Melted butter 3 Tablespoon
  Chopped pitted dates 1 Cup (16 tbs)
  Chopped walnuts/Walnuts 1⁄2 Cup (8 tbs)
  Chopped candied cherries 1⁄4 Cup (4 tbs)
  Chopped candied pineapple 2 Tablespoon
  Slivered candied ginger 1 Teaspoon
  Sifted pastry flour 3⁄4 Cup (12 tbs)
  Baking powder 1 Teaspoon
  Salt 2⁄3 Teaspoon
Directions

Beat eggs well, gradually stir in sugar.
Add melted butter.
Combine dates, almonds, cherries, pineapple, ginger and add to first mixture.
Sift flour with baking powder and salt.
Sift dry ingredients into the first mixture and combine thoroughly.
Turn into a well greased 8 inch square pan and bake at 350F 30 to 40 minutes.
Cut in squares when cold or cut in squares while warm and roll into balls and coat with fruit sugar.
