Prepare birds the same as for roast stuffed chicken or turkey.
Roast in moderate oven (325 F.) for 45 minutes to 1 hour until tender, basting with melted fat and sprinkling with a few spoons of water occasionally.
Allow 1 pigeon to a person.
If gravy is desired, use heart, liver, and stomach, chopped and cooked in a little water until tender and mixed with the drippings in the roasting pan.
