Chinese Chicken

Chinese Chicken is rich with an oriental twist. The flavors of onions, almonds and mushrooms add to the richness of this chicken delight. Just give this rich tasting Chinese Chicken a try.
Ingredients
  Roasting chicken 5 Pound
  Celery 1⁄2 Cup (8 tbs), cut in 1 inch lengths
  Chopped onion 1⁄4 Cup (4 tbs)
  Water chestnuts 1⁄4 Cup (4 tbs), halved
  Slivered almonds 1⁄2 Cup (8 tbs)
  Snow peas 1⁄2 Cup (8 tbs)
  Mushrooms 1 Cup (16 tbs)
  Thyme 1 Dash
Directions

A cup of brown cooked rice may also be added to above.
Rub the chicken with olive oil mixed with soy sauce and molasses.
Roast in a 300 ° to 325 ° oven, 30 minutes to the pound, or until chicken is tender.
Serve with rice and soy sauce.
Wild rice is also delicious.
Sliced pineapple, fresh or canned with a dab of whipped cream or ice cream makes a nice dessert.
