Chow Mein Foochow Style
|Oil||2 Tablespoon (For Pork)|
|Pork||1⁄2 Pound, shredded|
|Scallions||3 , cut into 1 inch sections|
|Mushrooms||5 , soaked and sliced|
|Broad noodles||1⁄2 Pound|
|Oil||3 Tablespoon (For Noodles)|
|Beef stock||2 Tablespoon|
Heat a pan with oil and saute pork, scallions and mushrooms for about 10 minutes, stirring constantly.
Transfer to a plate and set aside.
Boil the noodles in a generous amount of water for about 10 minutes, or until they are barely tender.
Pour into a colander,rinse with cold water and set aside to drain well.
Heat the pan again with 3 tablespoons oil and add the noodles.
Brown them well for about 12 minutes, stirring constantly, and then slowly add 3/4 of the pork mixture, and continue to cook for another 2 or 3 minutes.
Add the beef stock to moisten the mixture and stir once or twice again.
Turn the noodles onto a large hot platter and garnish with the remainder of the pork mixture, and sprinkle with sherry.
Serve very hot.
