Chinese Beef And Rice

  Sliced mushrooms/One 4 ounce can fancy button mushrooms 1⁄2 Pound
  Butter 1⁄4 Cup (4 tbs)
  Stalk celery 1 , thinly sliced
  Onion 1 Large, peeled and diced
  Green pepper 1⁄2 , seeded and diced
  Garlic 1 Clove (5 gm), peeled, crushed
  Soy sauce 2 Tablespoon
  Cooked rice 2 Cup (32 tbs)
  Cooked beef 1 1⁄2 Cup (24 tbs), cut into strips or cubes
  Fresh tomato 1 , diced
  Eggs 2
  Lettuce head 1⁄2 , chopped

Saute mushrooms in butter until tender.
Add celery, onion and green pepper.
Add garlic.
Mix in soy sauce, rice seasoned with salt, beef and tomato.
Heat through, stirring occasionally.
Just before serving, break eggs into mixture and stir occasionally.
Add chopped lettuce.
Don't cook after lettuce is added.
Serve at once so lettuce will stay crisp and eggs will not overcook.
Serve with additional soy sauce.
