Chinese Beef And Rice
|Sliced mushrooms/One 4 ounce can fancy button mushrooms||1⁄2 Pound|
|Butter||1⁄4 Cup (4 tbs)|
|Stalk celery||1 , thinly sliced|
|Onion||1 Large, peeled and diced|
|Green pepper||1⁄2 , seeded and diced|
|Garlic||1 Clove (5 gm), peeled, crushed|
|Soy sauce||2 Tablespoon|
|Cooked rice||2 Cup (32 tbs)|
|Cooked beef||1 1⁄2 Cup (24 tbs), cut into strips or cubes|
|Fresh tomato||1 , diced|
|Lettuce head||1⁄2 , chopped|
Saute mushrooms in butter until tender.
Add celery, onion and green pepper.
Mix in soy sauce, rice seasoned with salt, beef and tomato.
Heat through, stirring occasionally.
Just before serving, break eggs into mixture and stir occasionally.
Add chopped lettuce.
Don't cook after lettuce is added.
Serve at once so lettuce will stay crisp and eggs will not overcook.
Serve with additional soy sauce.
