Pollo En Jugo De Naranja (Chicken In Orange Juice)
|Frying chicken||2 Pound, cut into pieces|
|Flour||1⁄2 Cup (8 tbs)|
|Lemon pepper||1⁄2 Teaspoon|
|Canned frozen orange juice concentrate||6 Ounce|
|Canned crushed pineapple||8 1⁄2 Ounce (1 Can)|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Raisins||1⁄2 Cup (8 tbs) (Use White Ones)|
|Ground blanched almonds||1⁄2 Cup (8 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Ground cloves||1⁄8 Teaspoon|
Dredge chicken pieces in mixture of 1/2 cup flour, 1 tbs. salt and 1 tsp. lemon pepper.
Brown them in hot oil and arrange the chicken in a shallow baking dish.
Combine the frozen orange juice concentrate, crushed pineapple, dry sherry, raisins, ground almonds, cinnamon, cloves and if desired, the sugar.
Pour the mixture over the chicken pieces.
Bake 30 minutes at 325 degrees, basting several times.
Increase temperature to 350 and bake 15 minutes longer, but checking freguently to avoid overbrowning.
