Chinese Spinach Salad

Ingredients
  Fresh spinach 1⁄4 Pound
  Whole mushrooms 10 , thinly sliced (Fresh)
  Soy sauce 2 Tablespoon
  Rice vinegar 2 Tablespoon
  Salad oil 1 Tablespoon
  Water 2 Tablespoon
  Fresh ginger 1⁄2 Teaspoon, minced
Directions

Wash spinach, break off tough stems.
Drain well.
Place on two salad plates
Top with sliced mushrooms.
Combine soy sauce, vinegar, oil and water. Whisk.
Mince ginger; add to dressing.
Use some of the dressing for salad and pour some on bulgur, if desired
NOTE: Bulgur is a kind of cracked wheat popular in Turkey and the Middle East as a substitute for rice.
