Chinese Almond Muffins
|All purpose flour||1 1⁄3 Cup (21.33 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1 Tablespoon|
|Almonds||2⁄3 Cup (10.67 tbs), sliced|
|Milk||1 Cup (16 tbs)|
|Almond extract||2 1⁄2 Teaspoon|
|Butter||1⁄4 Cup (4 tbs), melted|
|Whole almonds||12 (For Garnish)|
Whisk together all the dry ingredients.
Stir in almonds.
In another bowl, whisk eggs, milk, almond extract and melted butter.
Make a well in the dry ingredients and add liquid ingredients, mixing quickly.
Batter will be lumpy.
Spoon into greased muffin cups three-fourths full.
Top each muffin with one whole almond.
Bake until brown and tester comes out clean.
Bake at 375 degrees 20-25 minutes
